13 years ago, Inchauspé’s journey to becoming a bestselling author and influencer started when she was 19 and sustained a severe back injury after jumping from a waterfall during a vacation in Hawaii. Her spine shattered into 13 fragments, causing a lengthy recovery that was both physically and emotionally grueling. “I suffered from a condition called depersonalization,” she recounts, “a terrifying sensation of fearing existence itself, questioning the purpose of my body, and experiencing panic attacks whenever I looked in the mirror. It was unbearable.

After her surgery, her back eventually recuperated. This encounter encouraged Inchauspé, who was then pursuing a mathematics degree in London, to delve deeper into her body’s workings. “I understood that health should be the topmost concern,” she expresses.

Inchauspé specialized in biochemistry and genetics, earning a master’s degree in the former field. In 2018, she experimented with a glucose monitor, sharing her observation that large spikes in her blood sugar levels were causing depersonalization episodes. “It was surprising,” she remarked, “because for six years, no one had mentioned that my diet could potentially influence my mental well-being. This discovery sparked my interest in improving my diet.

After spending two years refining her skills, Inchauspé shared her straightforward tips on Instagram. “I felt this burning desire within me,” she recollects. “I thought maybe I could attract a few thousand followers.” Six years have passed, and the Glucose Goddess now boasts an impressive following of five million people on the social media site. “It’s been quite a rollercoaster ride,” she notes.

As a fervent supporter, I must express my concerns about Inchauspé’s recent venture. While I appreciate her enthusiasm, I find myself questioning the supplement she sells, which she claims maintains steady glucose levels. I’ve noticed criticism towards her for this, as some feel it is misleading. Additionally, there are concerns about the generalizations she makes based on her own experiences, and advice to focus on potentially normal glucose spikes that may not require special attention.

Inchauspé admits that despite people’s best intentions, they are constantly surrounded by foods high in sugar and marketing. He suggests that it would be ideal if the Government implemented regulations across the industry that restrict, for instance, the sugar content in a yogurt pot. These restrictions should apply to all manufacturers since consumers might switch to another food company if one is making an effort to improve. Therefore, it needs to be a collective endeavor.

A significant part of Inchauspé’s work revolves around not just recipes, but also straightforward explanations of the scientific principles underlying her methods, often using clear diagrams to illustrate the impact of glucose on the body. Essentially, she views herself as a science translator, transforming complex research findings from global scientists into understandable information for everyone, emphasizing that maintaining optimal glucose levels is important for all.
