It’s worth noting that viewers weren’t given an explanation for the character’s departure in the series. After his exit, Chef Katsuji is seldom referred to in subsequent episodes. The only hint at something significant happening can be found around the 4 minutes and 40 seconds mark of Episode 5.
At that point, host José Andrés mentioned Chef Katsuji’s absence quite concisely, saying, “We unfortunately have one fewer chef than anticipated.” He simply added, “Chef Katsuji has to exit the contest.
