Gwyneth Paltrow has a legen-dairy cooking hack.
The Academy Award-winning actress, who started her wellness-focused restaurant Goop Kitchen in 2021, shared a surprising substitute for dairy products.
Gwyneth Paltrow, 53, shared a tip on the Today Show with Savannah Guthrie and Carson Daly on May 27th: if you’re avoiding dairy, she likes to dice up arugula and add it to dishes.
While cooking gluten-free and grain-free turkey meatballs on live television, she tried out a cooking trick: using greens instead of the parmesan cheese called for in a recipe from Goop Kitchen.
“It might sound strange,” Paltrow told a surprised Guthrie, “but it actually gives it a pleasant texture and tastes really good.”
The morning show hosts were willing to consider Gwyneth Paltrow’s unusual suggestion, but some viewers of Today strongly disagreed with it.
One Instagram user jokingly shared that when they run out of milk for pancakes, they simply substitute it with grass clippings.
Another took the joke even further, writing, “If my grandmother had wheels, she would be a bike!”
You know, I’ve seen a lot of reaction to some of my more… unconventional food pairings, and it’s interesting how people respond! I actually agree with some of the feedback – it’s all about how you look at it. One commenter really nailed it: instead of heavy cheese like parmesan, you can brighten things up with something peppery and fresh like diced arugula. It adds a lovely lightness, flavor, and even a bit of moisture – a really smart swap, honestly!
And it’s not the first time Paltrow has set the internet ablaze by sharing her eating habits.
Gwyneth Paltrow shared on the The Art Of Well Being Podcast in 2023 that she often enjoys soup for lunch. She specifically mentioned having bone broth most days as her go-to meal before her daily workout.
Despite her dedication to fitness, she also enjoys indulging sometimes, such as when she tried making cocktails while staying home during the COVID-19 pandemic.

In a 2021 interview on the SmartLess podcast with Jason Bateman, Will Arnett, and Sean Hayes, Gwyneth Paltrow shared that her go-to cocktail was a unique drink made with quinoa whiskey from a Tennessee distillery, mixed with maple syrup and lemon juice, which she described as heavenly. She admitted to enjoying two of these cocktails each night during quarantine.
After all, the Goop lifestyle brand owner knows how to indulge a craving when she feels like it.
Gwyneth Paltrow recently told British Vogue that the last time she indulged in junk food – a chocolate-covered Oreo – she really enjoyed it. She explained that while it was full of unhealthy fats and oils, she believes everything is okay in moderation. “Going too far in any direction isn’t healthy,” she said.
